Matcha Tea Pancakes

Have you ever gotten to the point where you’ve asked your kids: “what should I make for breakfast?” I’m usually at that point about three times a week.

This week my youngest suggested that I make pancakes. Good idea! But how can I beef up those cakes I’m making with a pancake mix for ultimate nutrition? Short answer, I probably can’t. But I might be able to add the extra benefits of let’s say… another powdery substance.

This week I’ve been trying out matcha tea. Why not see what happens if I throw a pack into the mix, right?

How did the kids like it? Loved it… the only evidence that there was anything up was the slight tint of green. I could simply pass that off by calling them monster pancakes:)

But I did need some extra help….

I went into the freezer and found some frozen BlackBerries from when my husband and kids went to picking about a month ago. I stuck them in a cup, put them in the microwave added a little bit of honey in hot water and blended. That did the trick! The kids loved it.

It wasn’t completely guilt free (or gluten-free) but I felt like they weren’t just plain pancakes. And that somehow made me feel good.
